Choc Fudge Brownies

The is a recipe that I got from my mother……. but I tweaked it a bit. It’s great when warm from the oven but also delicious when chilled from the fridge. Drives my colleagues nuts and those of my partner as well.

Ingredients:

  • 4 eggs
  • 2 cups of plain flour
  • 2 cups of castor sugar
  • 2 teaspoons of vanilla
  • 250 g of butter
  • 1/2 cup of cocoa
  • 1/2 cup of dark choc chips
  • 1/2 cup of white choc chips

Step 1: Beat the eggs, sugar and vanilla for 1 minute with a whisk. Don’t use an electric beater, you don’t want too much air in these brownies. You want them to be a bit thicker and solid.

 

 

 

 

 

 

Step 2: Add in the melted butter, flour and cocoa and stir/fold with a spoon/spatula until the mixture is thick and combined. Be careful to stir slowly, otherwise the mixture will flow over the bowl.

Step 3: You need to fold and gently stir the butter into the mixture so it is all absorbed. You should end up with a sticky paste-like substance.

Step 4: add the choc chips and stir throughout the mixture.

 

 

 

 

 

Step 5: Pour the mixture into a deep sided tray  (greased with cooking oil) and spread evenly with the back of the spoon.

 

 

 

 

 

Step 6: place in the oven at 170 degrees for 20 mins. The centre brownies tend take a little while to cook through. So if after 20 mins, the centre pieces look slightly soggy, then leave in for another 2-5 mins (at the most).

 

 

 

 

 

Step 7: Once out of the oven, leave to cool on a tray for about 15 mins. Once cooled you can then slice up the brownies to your preference.

 

 

 

 

 

 

Step 8: This step is optional. You can enjoy the brownies fresh ; OR you can put the brownies in the fridge overnight. This allows a fudge layer to form, so when enjoyed the next day, you are enjoying brownies with a fudge layer.

The recipe takes only 10 mins to prep and 20 to cook. It is quick, easy and a big favourite with crowds. Please enjoy with friends.
